Wow, we´ve got the Gods on our side in this one!!
First Kasper chose a saison yeast blend (abbey ale + saison) and a free rise fermentation regime. Then Shaun and I held our breath - what if the malt and/or hop challengers chose to go either very American, German, Czech or British...? BUT Rune asked for 87 % Pilsner, 9 % Biscuit, a bit of Carafa I + maple syrup and muscovado sugar... Still a great combo for a dark saison type. The I started biting my nails and Shaun prayed that you would NOT ask for some muscular high alfa/high cohumulone US aroma bomb like Columbus, Warrier, Tomahawk or the like...
The combination of a dark saison (with lots of esters from that blend), some sugars (with aroma and taste) to give extra high fermentability and the NZ hops with lots of fruity/floral aromas... it is way more promising than I had ever anticipated!
